Resto is turning two and this Saturday, just in time for the Jewish holiday, they are celebrating with a slow-roasted piggy. The 100-pound Berkshire pig (it's no skinny bones) will be cooked in La Caja China, or "the Chinese box," what many consider the supreme apparatus for animal roasting.
Inspired by Asian cooking principles, the rectangular wood chest allows the animal to cook under charcoal, not on top, which maximizes heat generation and flavor saturation.
The feast will start at 7 p.m., but there's only enough for 50 to 60 mouths, so come on the earlier side. Reservations are recommended. For $30, your plate will be full of meat, fresh cranberry bean salad, and pickled ramps. To wash it down, they'll have Duval and St Feuillien beers.
