8 Squash Dishes in NYC We Love

One of the best parts about vegetables is how their natural sweetness comes out when they're cooked well; and no vegetable does this as brilliantly as squash. I can't think of anything I'd rather eat in the middle of winter than a heaping bowl of perfectly roasted butternut, enlivened by nothing more than olive oil and salt. Touring The Hudson Valley With Chef Dan Kluger of ABC Kitchen

The Hudson Valley is that beautiful, expansive chunk of land along the Hudson River that's home to many farms, some of which are represented at New York City's Greenmarket. The farmers trek into the city with their cherries, beets, goat cheese, and many other fresh goodies piled onto flatbeds to sell at farmers' markets and to some restaurants. We recently road-tripped with ABC Kitchen chef Dan Kluger, to meet some of the farmers that supply his ingredients. 30 Savory Bites from Taste of the Nation, NYC

Monday's New York edition of Taste of the Nation proved to be an epic meal. The highlights among the savory dishes included an insanely rich Spanish mackerel crudo from the Union Square Cafe, a cup of creamy stracciatella with sea urchin, caviar, and nasturtium granita from Roberta's, and a suckling pig croqueta from Bar Basque that came with a dropper of salsa verde and a slow cooked quail egg.
