Popbar, the gelato-on-a-pop shop on Bleecker Street, has expanded their non-frozen selections. They already sell one winter friendly product, a hot chocolate on a stick. Now, they have a second—Waffle Pops—and they're damn good too.

Popbar's Waffle Pop ($3.49 for the basic model) consist of a high quality waffle with an optional filling. You can choose from blueberry, chocolate, roasted pear, and unfilled. You also get to add a variety of toppings such as pistachios, milk and dark chocolate, whipped cream, and sprinkles. Popbar has some suggested flavor and topping combinations including a "Chocolate Explosion" ($4.49) that includes chocolate chips inside, powdered sugar, sprinkles, and white chocolate drizzle on the outside. Or, you can design your own as I did.

My chocolate chip waffle with powdered sugar, dark chocolate drizzle and whipped cream was served piping hot with that ideal waffle contrast of toasted crust and soft, fluffy interior; melted chocolate chips bring it into chocolate chip cookie territory. If you get one on a freezing night, it's just like getting a chocolate chip cookie fresh from the oven.

The waffle pops are made in advance and then heated to order on a waffle iron. I was told my waffle, purchased at 5:00 p.m., was made "a few hours earlier." And that's really why this dessert is so good—hot, fresh, waffles are freaking delicious whether they're on a stick or not.

I enjoyed the plain, unfilled waffle with no toppings as much as the jazzed up versions. If you enjoy blueberries in your pancakes you'll like the blueberry waffle pop, but I'd still go with chocolate for your first visit.
