The wizards at Dominique Ansel Bakery released another set of six new pastries last week. My favorite so far is the cloud-like Grapefruit Lavender Pavlova ($6). Two small hemispheres of lavender meringue are surrounded on all sides by a light and airy Tahitian vanilla cream. At the center is a tiny flourless olive oil biscuit with two or three fresh pink grapefruit segments on top.
There's something special about the way the vanilla cream balances the citrus. The tart grapefruit segments have their bitterness neutralized by the lightly sweetened Tahitian vanilla cream.
The two mauve-colored lavender meringue cups add crunch to the dessert's sweet softness, and the aromatic lavender makes its presence known. If you're making a special visit to Dominique Ansel Bakery and looking for the pastry that's least similar to the Cronut—this subtle number is it.
The bakery also released new savory items including this lipsmacking-good Mushroom Duo Panino ($8.50). It features portobello and crimini mushrooms that have been sautéed in sage brown butter. They're pressed beneath bread along with some smoked mozzarella.
