Momofuku Milk Bar Pumpkin Pie Cake Truffles
Last month, in an effort to try as many pumpkin desserts in New York City as possible, I sampled Momofuku Milk Bar's Pumpkin Pie Cake Truffles ($4 for three). They're a bit of a departure from previous incarnations of this classic Milk Bar dessert.
The most popular flavors, such as the Birthday Cake and Cookies and Cream Cake Truffles, mostly stick to the Milkbar flavor style—super-sweet, very soft and moist, like a lightly baked cake. But I found the pumpkin pie version to be less sweet and more cakey than the others. It also has a prominent pumpkin flavor that I really enjoyed.
The truffles get that extra jolt of squash from two ingredients: crumbled pumpkin cake and a pumpkin ganache, the latter made from heavy cream and pumpkin pulp. The outsides of the truffles are dusted with a sweet and salty powder made from graham crackers and candied pumpkin seeds that serve as the pie's "crust," also offsetting its sweetness.
Just don't wait on these—the truffles are only available for another week.
