Video: The Chef Behind the Spiciest Thai Joint in Hell's Kitchen
If our interview with Ratchanee Sumpatboon, the Thai chef of Larb Ubol, didn't convince you to try the food, this certainly should. In his latest video for Eater, Robert Sietsema steps inside the Hell's Kitchen restaurant to show how Sumpatboon (nicknamed "Poodam" after the black crabs found in this brand of Thai cooking) makes her papaya salad with a massive mortar and pestle and cooks up her winning Isan food.
Sietsema's been a fan of Sumpatboon from her early days at Chao Thai and her own short-lived restaurant in Astoria, and it shows. This video tribute is most definitely a loving one.
