Christmas goose is a famous holiday tradition, but let's face it, not many of us are really going to go out and roast a goose for the holidays. But some butchers like Williamsburg's Marlow & Daughters stock geese throughout the season and manage to come up with a few specials for those of us that don't have a crowd to feed a 10+ pound game bird to.
I spent some time with the team there to watch them make goose sausage, smoked goose breast, and goose leg confit, all of which will also be included in the first weeks of Marlow & Sons's Cassoulet specials which are set to start in the next week or two.
