The dim sum menu includes eight options in total. There are steamed tiger prawn dumplings, scallop siu mai, black pepper wagyu beef puffs, barbecued pork buns, deep-fried shrimp spring rolls, pork and black truffle dumplings, morel and wild mushroom dumplings, jin dui, and osmanthus jelly.

Beef puffs in the making. It was amazing to watch Chef Man Sing Lee at work. He's been making dim sum for 26 years in Hong Kong. The wagyu beef is marinated in a heady black pepper sauce, wrapped into the dough, and deep-fried.

The dough is layered with both lard and butter. If you take a closer look you can seen dozens and dozens of paper-thin (or as chef said, "newspaper thin!") layers.

Next up, Tiger Prawn Dumplings. Chefs pinches off a bit of dough and rolls it into a log. Then he chops off a half-inch, forms it into a ball, and quickly flattens it into a perfect round with the cleaver. Took him just a few seconds to do all this.

Stuff and fold. After each fold he trimmed the edges with scissors. All about precision and speed.

And don't forget about dessert. The "Chinese Sweets" selection comes with chewy sesame-speckled jin dui filled with black sesame paste, and this refreshing, chilled osmanthus jelly topped with wolf/goji berries.
