Video: Khachapuri, a Georgian Bread Baked into South Brooklyn

Khachapuri, an umbrella term for a variety of cheese breads, is something of a national pastime in Georgia. Running a gamut of baked goods from the pastry-like penovani to the boat-shaped, egg-crowned adjaruli, good khachapuri embodies Georgian cuisine's commitment to serious bread and hearty fare.

Georgian Food (signed out front as "Brick Oven Bread"), a bakery and takeout in Brighton Beach, joins several other Georgian kitchens in adapting the ritual of baking khachapuri and shotis puri to South Brooklyn. Co-owner Shorena Dalakishvili, who founded the business with partner Mzia Induashvili after immigrating from Georgia, puts it plainly in this episode of 1 Minute Meal.
