Watching the Portuguese roll get toasted, smeared with beans, doused with guacamole, and covered in crisp, shredded iceberg was somewhat Groundhog's Day-ish this time around. But the routine preparation yielded different flavors, thanks to the addition of tender pork shoulder and a sweet and spicy tomatillo salsa. Together, the two ingredients mix for a rich, braised-pork-salad sort of sandwich: meaty and salty with the help of crumbled Oaxacan queso.
