Sugar Rush: Chocolate Soufflé at Bouchon Bakery Café

Sometimes you just want a classic soufflé, plain and simple. To satisfy these cravings I've been alternating between Minetta Tavern, DBGB, and Bouchon Bakery Café. At the first two I order Grand Marnier soufflés, but at Bouchon, it's chocolate ($11.95) all the way. Hot with a dusting of sugar, it rises high above the ramekin. A serving of vanilla crème anglaise comes on the side.

Crack it open with the spoon, out comes the steam, and then you pour the anglaise straight in. Both elements are ethereal and decadent, with that custardy light texture. It's good enough not to share.
