Sugar Rush: The Modern's Dessert Trolley
The best dessert at The Modern isn't on the menu.
But it's offered to every diners at the end of dinner. Meet The Modern's Dessert Trolley. It's a whimsical piece of art from pastry chef Marc Aumont. The foundation of all these single-bite sweets are classically French, but ideas and inspirations are drawn from a multitude of cultures. I counted exactly 15 sweets. Shall we begin with some of our favorites?
Let's start with pâte de fruits. Have you tasted a banana-nutmeg combination before? It's unusual, and memorable, as spices don't often make their way into this classic confection. And instead of cutting it into the usual square or circle, these are sliced thin and rolled. Staying in the sculptural theme of the MOMA...
...are knotted carrot (!) marshmallows. Simple and sleek.
Don't pass on the apple calvados lollipops with a shell of dark chocolate and crushed hazelnuts...
...or these gooey, salted chocolate chip cookies, their crisp surfaces sinking into a chewy center, and just the right size.
Delicate stroopwafels sandwich a housemade chocolate-hazelnut filling.
And of course, the chocolates! From left to right there's vanilla and tonka bean, lemon, and a boldly scented fennel. Pistachio and the clean flavors of lemongrass meet in a white chocolate bonbon, and at the very right is my favorite, the saffron and honey.
But if you simply cannot find room for sweets (though I can't imagine that happening), you can always ask for a coffee frappe pumped on the spot. Light and frothy, it's the ideal finish to any meal.
How many sweets are you allowed to select from the trolley? As many as you want. Hooray!
