Here is a Tarte Tatin that puts all others to shame.

Seriously! Have you ever seen anything like this? The Tarte Tatin ($28 for two) at Gotham Bar and Grill serves two. It is presented at the table whole, then taken back into the kitchen, halved, and plated with housemade vanilla ice cream. It is magnificent, golden with caramelization and shimmering with plenty of butter.

Braeburn are the apples of choice; they remain firm but tender, sinking into seemingly endless layers of flaky puff pastry. If you've thought the tarte tatin served at The London was the best you've had...you're not too far off. Chef Ron Paprocki previously led the pastry kitchen there before coming to Gotham Bar and Grill.
