I'm always happy to welcome a new kofte into my life. The compact ground meat kebab rarely takes the spotlight—glistening gyros and whole-meat shish kebabs receive that luxury—but dense meatiness and moody spices make kofte easy to love. At Turco Mediterranean Grill, a casual Turkish restaurant in Hell's Kitchen, you can find a fine one in sandwich form ($6.95), with lettuce, red cabbage, and tomato for balance. The kofte stays juicy even after a subway journey, though with this fresh, thick, pillowy-yet-chewy pita pocket, the sandwich deserves to be eaten on the spot.

Don't skimp on the sauces, which make for a messier but tastier sandwich. The yogurt sauce is thin and light, flecked with leaves of dried mint; the hot sauce posseses a ruddy heat that stays with you.
