Roules are my favorite thing to order at the Houston Street location of François Payard Bakery. In the summer, I stick with the Strawberry Roule. But when the chocolate craving hits, a slice of the super plush Chocolate-Tofu Roule satisfies without weighing me down. The Hazelnut Roule ($4.25) was previously paired with a raspberry jam filling, but they recently replaced it with something even better...hazelnut mousseline. Whipped and rolled in a 1:2 ratio with sponge cake (dotted with crushed and ground hazelnuts), the roule comes topped with even more hazelnuts—salted, chopped, and toasted. The flavor as you can imagine, is intense. Pure hazelnut in a multitude of textures.
