The classic croissant is split and filled with both crème d'amandes—a mix of ground almonds, sugar, butter, and eggs, and another version done with ground pistachios in place of almonds. The top goes back on the croissant and is finished with more crème d'amandes over the surface and a sprinkle of chopped pistachios. A bake in the oven, and ta-dah, straight-up and pure Pistachio-Almond Croissant.
