We need more delis like M & O Market Deli in Soho: places that turn basic sandwich ingredients into lunches that are more than the sum of their parts; kitchens that make their own great pastrami but don't tell you unless you ask. Because then we'd have more spots to get a pretty great Rachel.

M & O carries Boar's Head pastrami in their deli case, but on most days except Thursday they also sell their homemade stuff. It's pretty solid pastrami, meaty and a little sweet, with great bark and a just enough smoke. They'll use it on whatever sandwich you like, but we'd recommend you go for their special on a crackly-crusted hero ($9.50) with cole slaw, Swiss, and Russian dressing. The dressing is on the sweeter side, but not unpleasantly so, and the meat's more than good enough to stand up to it.

If you decide today is pastrami day, don't go too late. It's designed as a lunch offering and may run out by 2 or 3 p.m.
