These little three-bite Pistachio Agave Cookies ($3) are stored in glass cookie jars at Toby's Estate. They compete with the likes of Roberta's glorious Sticky Buns, canelés, and gigantic lamingtons, and while they're not nearly as attractive as the rest, order one to-go and you won't regret it. The toasty pistachio flavor is vibrant, and the touch of agave seems only to amplify it, while the texture is like a cross between a flourless cookie and traditional meringue. (For those curious, it is gluten-free). Crunch and then melt into this simultaneously soft and chewy, nutty cookie—three bites is just enough to satisfy.
