Translation: Ribsteak cooked over coals.
The Raw Product
40-day dry aged USDA prime ribsteak. I always ask to see a steak before its cooked. I could smell the funky blue cheese notes from the aging from across the room at Tertulia.
The ribsteak aggressively seasoned and grilled over wood charcoal, giving it a pronounced smokiness.
The steak is brought to the table sliced and salted. While the exterior does not get as charred as it would at a typical steakhouse, it has a wonderful mahogany crust.
