The Classic Grilled Cheese ($7) at Saxelby Cheese in the Essex Street Market is something like a savory, oozy waffle. The thick-cut country bread, brushed with tangy New York State butter, gets a crinkly, crispy crust from a generous sandwich press squeeze—generous enough to have you thinking waffle right away—or waffle fries.

Saxelby opts for a gooey, buttery Shelburne Cheddar, and they don' tread lightly with it. Take a bite and the sandwich erupts, a molten flow of some of the highest quality dairy our city has to offer. It's been a while since we've encountered a grilled cheese with filling and bread so well-matched, both in terms of proportion and overall quality of ingredients.
