You'll find the tarts complete with apples and pears (pictured), sliced and baked tender. Ask for the corner piece when possible; those few bites of well-browned, almost burnt puff pastry are irresistible, especially with a dusting of powdered sugar. The pastry itself aims for light and flaky, just sturdy enough to uphold that buttery almond joy.
