Salmon soup, cucumber salad, cranberry porridge, crisp rye bread with cheese, soft rye bread and butter, and low-fat milk.
Lohikeitto is a traditional Finnish salmon soup. It's pretty hearty, featuring plenty of salmon and potato chunks in a creamy dill-flavored base.
Hapankorppua and Suomalaista Mietoa Juustoa; Ruisleipä and Voinappi
On top is hapankorppua, crisp sour rye bread topped with a slice of mild and creamy Finnish cheese. On the bottom is a slice of ruisleipä, rye bread, and to the side is voinappi, a (generous) round of butter.
Tillikurkkuja and Vispipuuro
For a vegetable (technically a fruit, but you know what I'm talking about), there's tillikurkkuja, lightly pickled sweet and sour cucumber slices flavored with fresh dill. For dessert, there's vispipuuro, a whipped, lightly sweetened semolina-based porridge usually made with lingonberries, but in this case cranberries since lingonberries were unavailable.
How to Eat Vispipuuro
Vispipuuro is usually eaten with milk poured on top. It definitely tastes better that way; without milk, it's a bit too thick and tacky, while mixed with milk it's lighter and smoother.
