Behind the Scenes: Charred Berkshire Pork at Aquavit

At Aquavit Scandinavian cuisine is constantly being reimagined and reinvented. And with his charred Berkshire pork dish ($35, or part of a four-course $85 tasting menu), Chef Marcus Jernmark has really hit it out of the park. The dish is full of Scandinavian touches, such as the use of rosehips in the jus, but the star of the plate is a slow-cooked sous vide pork shoulder that's finished with a beautiful char on a Japanese yakitori grill. Tons of fresh, fragrant herbs are used throughout the dish, infusing it with extra flavor.
