3-inch cookies are sold by the piece, ranging in price from $2 to $3.25 ($3.75 for the chubby Chocolate Chunker in the very back).

Classic Vanilla Sablé
The butter-rich shortbread is infused with Sonoma Syrup & Co. Vanilla Crush extract: "I'm in love with with it—there's crushed pulp in there, and it's just intoxicating."
"This cookie came to me in a dream when I was in Paris, a cookie topped like a tart, and the very morning after I made it." The cookie base is the same as the classic vanilla, but it gets topped with a dollop of jam and a ring of vanilla streusel. Dorie's made these cookies with lots of jams, including one with port that she sells here, but blueberry is her husband's favorite, and it's the flavor she finds herself returning to.
World Peace Cookies
For many, the cookie to end all cookies. The dark sablés are made with both cocoa and chunks of dark chocolate, and a hit of salt.
Though Dorie has a full-time pastry chef baking cookies at breakneck speed, she gets plenty of kitchen time herself. "I'm in charge of the aromatherapy division, and I beg them to let me make cookies like these. I grate the lime zest over the sugar and rub it in by hand to release the oils; the kitchen smells amazing."
With visible grains of espresso and bittersweet Valrhona chocolate.
Like her chunkified blondie bar cookies, this blondie round cookie has shredded coconut alongside Valrhona milk chocolate and toasted pecans.
"These have pounds of chocolate in them." Consider: melted and chopped bittersweet chocolate and milk chocolate chunks, joined by dried cherries and salted cashews.
The cookies are punched out—and baked—in these stainless steel ring molds, which preserves their sharp edges.
Beurre & Sel will be selling the molds later in October. Whether you use them as baker's aides or fashion statements is up to you.

These mini cookies are made with a touch of almond flour, and topped with black and white sesame seeds.
