World Peace Cookies
For many, the cookie to end all cookies. The dark sablés are made with both cocoa and chunks of dark chocolate, and a hit of salt.
Though Dorie has a full-time pastry chef baking cookies at breakneck speed, she gets plenty of kitchen time herself. "I'm in charge of the aromatherapy division, and I beg them to let me make cookies like these. I grate the lime zest over the sugar and rub it in by hand to release the oils; the kitchen smells amazing."
With visible grains of espresso and bittersweet Valrhona chocolate.
"These have pounds of chocolate in them." Consider: melted and chopped bittersweet chocolate and milk chocolate chunks, joined by dried cherries and salted cashews.
The cookies are punched out—and baked—in these stainless steel ring molds, which preserves their sharp edges.
Beurre & Sel will be selling the molds later in October. Whether you use them as baker's aides or fashion statements is up to you.
