There are many palmiers in this city, but the ones from Épicerie Boulud ($3) are among the best. Find them near the register, wide golden fans easily the size of your hand. They are all at once delicate and sturdy, with what seems like a hundred layers of puff pastry rolled extra thin. They are baked just to the point of caramelized, every bite crisp and faintly sweet. There are many more decadent and creative desserts at Épicerie Boulud, but this classic is one I'd gladly devour each day of the week.
