I call Japanese cheesecakes my "summer" cheesecakes, because they're so light and unexpectedly delicate. The version from Cafe Zaiya ($3.75) is the quintessential Japanese cheesecake. Soft, and more fluffy than dense, it's like a cross between a sponge cake and traditional cheesecake. Bites finish with a subtle tang and a lingering vanilla. Couple with one of these black sesame frappes and you've got a complete afternoon snack.
