Vegan Divas (also home to carrot cake and doughnuts ) recently launched an e-commerce site, and what better way to celebrate than with a slice ($5-$5.50) of this Vegan Dark Chocolate Cake? With a base made from spelt flour, the cake is composed of three elements. At the bottom there's a dark chocolate brownie, more fudge than cake and borderline ganache. It's topped with their signature chocolate mousse, velvet made with tofu and actual chocolate (most vegan bakeries use carob in place of chocolate). And finally there's a finish of chocolate French glaçage—a glossy mirror glaze. The glaçage recipe was developed after much tweaking between Fernanda and her husband François Payard, so you're pretty much guaranteed that this is flat out awesome.
