Utterly light, the Greek Yoghurt Panna Cotta ($11) from Craft is dessert for someone who isn't exactly craving dessert. It's one of the newest menu creations from pastry chef Meredith Tomason, and quite a delicate one. It starts with a silky panna cotta base, supple and cool, refreshing with a distinctive tang from the yogurt. It's then coupled with bare droplets of olive oil and cucumber-watercress sorbet, which makes a refreshing sauce for the panna cotta as it melts. It makes an ideal finish to a heavier meal, a dessert that will lift you up instead of weigh you down. Keep this one in your books for the warmer summer days to come.
