The foam is excessive and a little silly, but that aside, Frozen Banana Souffle ($12) is a dessert you'll want to order at Tocqueville. The crackle of golden sugar and warm bananas is best when alternated with spoonfuls of tart, clean lime sorbet. To the left there's frozen banana souffle that can also pass as an excellent semifreddo gone light. And tucked beneath there's an incredibly moist banana cake rolled in coconut shavings—I'd get this dessert for the cake alone. And don't forget about their housemade iced tea blends (creations change daily—think hibiscus or chamomile with lemon verbena) once the warm weather rolls around.
