The current lunch menu at James in Prospect Heights is a celebration of vegetables, with enticing-sounding salads and vegetarian plates and sandwiches, but I couldn't resist the Cured Salmon & Beets ($12) sandwich. It sounds like a few too many elements (the menu lists charred scallions, watercress, and pickled shallots) but they all work together: the slick, just-fatty-enough salmon in ample portion to balance the earthy beets, the two of those forming a core accented by the char of the scallions, the distinctive bite of watercress, and the sharp tang of pickled onions. I didn't know that salmon and beets belonged together, but after this sandwich, I'm pretty sure they do.
