One of the things I love most about Dominique Ansel Bakery is that there is always something new to try, be it an ice cream flavor, pastry, or in this case, the Ruby Charlotte ($5.25). Airy light raspberry mousse comes flanked by a duo of housemade lady fingers, delicate and perfect for the the season. It's paired with shards of white chocolate and fresh raspberries, each one hand-piped with raspberry jam (talk about attention to detail). And if you visit on a weekend, don't forget a side of miniature madeleines baked to order. It's a relative bargain at $4.25 for 10 pieces, each one hot with crisp, dark golden edges, fluffy inside with a note of lemon. Absolute heaven.
