A Sandwich a Day: Pernil Cachapa at Patacon Pisao

Everyone comes to Patacon Pisao for the namesake plantain-based sandwich, but there's plenty more on the menu at this Washington Heights street vendor turned Elmhurst brick and mortar. Take, for instance, the cachapas ($6.50 to $7), sweet corn cakes folded over like quesadillas, stuffed with cheese or a number of meats.
Pernil, slow-roasted pork shoulder, is especially succulent and fatty, a great complement to the sweet, tender corn wrapping. The other fillings—lettuce, out of season tomato, and slightly soured cream—are nothing to write home about, but offer slight crunch and cool creaminess. Really though, this sandwich is about the glories of sweet corn and rich pork. Fine things, they are, and perfect to share with friends alongside some patacones and a bracingly tart homemade limeade, made with raw sugar.
