A brunch take on The Beagle's dinner pairing boards, a shot of aquavit is served with tender pieces of cold gravalax and a sweet corn cake. A cured egg yolk is grated over the fish, lending a salty punch to the dish.

Two eggs, fried or scrambled, are served with mixed greens, a super-sized hash brown, and your choice of boar sausage (pictured here), salt-roasted pork belly, or corned tongue.

Sharp cheddar cheese is found both inside and on top of these crisp-edged pancakes. Silver dollar-sized pats of foie gras butter add an intense richness, further upping the savory flavor of the pancakes. Maple syrup is served alongside for sweet balance.

A runny-yolked egg is baked into a rich, spicy tomato sauce, then topped with a salsa verde of tarragon, mint, parsley, capers, and anchovy. Toasted batons of crusty bread are well-suited to mopping up the egg and sauce.
