Tyler Kord loves mayonnaise, and he is not afraid to use it. A sign on the wall at the new Greenpoint, Brooklyn location of his No. 7 Sub shop simultaneously sings its praises and offers fair warning to those who — gasp! — don't like it.

But mayo is not the only thing between the bread here. Kord is the kind of guy that tempura-batters his broccoli and smokes his French dressing. He builds sandwiches with structural integrity and a seemingly inexhaustible variety of ingredients. Crunch mingles with cream, salty hangs with sweet and spicy, and the whole thing hangs together through the very end — no filling left behind.

In other words, Tyler Kord understands that proper sub construction is as much a craft as it is an art. He's got ideas for days, and he's not afraid to swim against the current of bánh mì and burgers.
