Sugar Rush: Indian Apple Pie at City Bakery

A classic, but with a twist. Individual Indian Apple Pies are $6 apiece at City Bakery, and come with a cornmeal crust in place of a traditional crust. It's thin and crunchy, almost cookie-like, and sinks into layers of thin apple slices. Those slices are bathed in a heady mix of cinnamon, molasses, and ginger for creeping heat. Molasses coats the apples in a way that makes every bite unusually rich, almost velvety. As for the bottom crust? That part is classic, flaky and all-butter.
