Okay, so eggplant's not in peak season right now. But it's one of those vegetables that's possible to get year-round, and lends itself to saucy smothers and smoky flavors and belly-warming stews that are perfect for winter.

And it's one of those culinary chameleons that can take on the flavors of just about any cuisine. Italian? Bring on the mozzarella. Japanese? Hello, miso. Indian? Israeli? Sichuan? All good. The humble eggplant has an awful lot of stamps in its passport.
