Sugar Rush: Rosewater and Tahini Fruit Salad at Public

The Tropical Fruit Salad from Public isn't just about the fruits. But we'll start there: a colorful bowl of fresh and sweet orange and grapefruit segments, mango and papaya, and shiny red grapes. No bruises, perfectly ripe. That alone can pass as a great fruit salad. But they take it a few steps further. The salad is barely scented with rosewater, just a bare touch—overly perfumed, more fragrant on the nose than tongue. It's topped with a dollop of tahini yogurt. The yogurt is well-strained and thick, a generous proportion of tahini (sesame paste) whipped in smooth, with a bit of sugar for a sweet finish. Now if only every other restaurant offering fruit salad would give it this much thought!
