Payard might not be returning to the Upper East Side anytime soon, but you can still get many of his pastries (chocolates and fresh almond croissants included) over at Butterfield Market on Lexington Avenue. Butterfield also stocks the full line of his dessert verrines, including this raspberry number. The top layer is my favorite: perfect tiny cubes of raspberry marshmallows finished with a dab of grassy olive oil for flavor. These marshmallows are tart, and the flavor much more prominent and bold than the small size would lead you to expect. Dig in and capture all the layers. First the sweet, seed-speckled raspberry jam, then a blended mousse of chocolate and raspberry, creamy and butter-smooth. For textural contrast, flourless chocolate cake slices right through the center. It's brownie-like, dense and fudgy, for days when an ordinary slice of cake just won't do.
