At SHO Shaun Hergatt, the Exotique ($12) brings together pineapple and black sesame. First, there's the braised pineapple serving as a cannelloni shell, with a cool, light filling of white chocolate and passionfruit cream. Chocolate cuts the tartness of the passionfruit, and the pineapple is unexpectedly soft and slippery, melting on the tongue. Alternate with spoonfuls of velvety coconut milk ice cream and a black sesame nougatine tuile, caramelized for plenty of crunch. To finish, a bold, nutty smear of black sesame paste. The tropics and Asian ingredients; what's not to love?
