The people at Bite do a serious weekday lunch business, and their Sabih ($7.00) is a serious sandwich, on a menu full of fresh options that run from Mediterranean to Italian to Indian.

The Sabih falls in the Mediterranean category. Bite's version of this classic sandwich stacks chopped and sauteed eggplant, (impressively) cleanly sliced hard boiled egg, chickpea hummus, and Mediterranean salad (a pickled pepper-like spread) on a crispy French-style mini loaf. Ask for "spicy" and the chopped salad comes loaded with red pepper seeds that impart just the right amount of extra heat to the egg-eggplant mixture. The best part of the salndwich, however, is its creative and well-executed mix of textures: soft and smooth from the hard-boiled egg, creamy from the hummus, oily and spongy from the eggplant, crispy and chewy from the bread loaf, and even a little bit of crunch from the red pepper seeds. This is a sandwich that fails to bore your palate, from your first tasty bite to your last.
