Mont Blanc generally has three elements: whipped cream, chestnut puree and and meringue. Lady M's version of the Mont Blanc ($9) omits the meringue, something which would ordinarily be unforgivable, but can be overlooked here simply because of the abundance of chestnut puree, an element most places are stingy with. The perfectly piped chestnut puree, barely sweetened, rises high above the lip of the cup and all the way down—forming a cocoon for the heart of thick, freshly whipped cream. There's one chestnut pressed at top to seal the deal, a dreamy finish for a dessert that's rich enough to justify sharing.
