Just a few weeks old, the East Village's Cowgirl's Baking had already earned a loyal following for their vegan cupcakes. Cowgirl's doesn't replace Babycakes or Tulu's in my books, but it's certainly a welcome addition offering flavor combinations I could never picture the other two bakeries doing. There's a Coffee & Donuts cupcake where a chocolate-coffee cake comes with chocolate-coffee frosting and a mini doughnut on top. (Yes, the doughnut is vegan as well!) Or even better, the Tres Leches with vanilla bean creme anglaise-soaked vanilla cake, and a finish of vanilla frosting and dulce de leche. However, my personal favorite is on the classic side: chocolate and peanut butter frosting. That's the mini cupcake pictured above, just $1.50 each (the regular-sized cupcakes are $3 each). It's a combination to love, especially when the peanut butter frosting is kissed with plenty of salt, an ideal balance to the dark chocolate cupcake base.
