The waitress described Galanga's Green Noodle ($10) dish with the words, "Asian pesto." And that comes fairly close to summing up this warm dish of sauteed wide, flat rice noodles. Served on a bed of romaine lettuce, scallions and crunchy celery bits sit alongside pieces of scrambled eggs that have soaked up all the flavor of the "pesto." That pesto is a blend of Thai herbs, most prominently a variety of basil and chili peppers, shallots, and a squeeze of lime.

It's bright in flavor without coming off as a heavy, a common occurrence with any dish utilizing those oil-loving wide rice noodles. The Green Noodles, along with Galaga's signature Zen Noodles ($10) in which clear bean thread noodles meet wood ear and shitake mushroom in a soy-based sauce, are no traditional Thai dishes, but both rank among my favorites at Galanga.
