Sugar Rush: Praline Parfait at Pearl Oyster Bar

I've already raved about the killer Hot Fudge Sundae at Pearl Oyster Bar, and the Blueberry Crumble that rolls around each summer is no slouch. But there's yet another to add to that list: the Praline Parfait ($7), where the butterscotch is made in-house, a silky, slow-flowing concoction of butter, brown sugar, and plenty of cream. The butterscotch is piled at the bottom of the parfait glass, scoops of vanilla ice cream on top, then a final pour of butterscotch—just enough so that it drips down and lightly coats the side of the glass. Toasted pecans and praline complete the parfait, each bite marked by sweet tiny crackles of the crushed praline.
