Sugar Rush: Lemon Souffle at L'Artusi

They'll tell you the Meyer Lemon Soufflé ($10) at L'Artusi serves two. But in my world, it serves just one—you might be able to part with one of the butter citrus shortbread cookies, but that's all. The little ramekin holds a high-rising soufflé, with a crisp, lightly browned surface. Use the spoon and make one shallow cut, then pour in the silky honey creme anglaise. Each steamy and airy light spoonful is cut with the cool yolk-rich creme anglaise. The citrus and honey stand out boldly, an excellent pairing. Don't use up all the anglaise with the soufflé; it also makes an worthy dipping sauce for the shortbread.
