At Kam Hing Coffee Shop, the house-baked Sponge Cake is not just good, but legendary. Visitors from around the country carry home boxes of these, eggy soft cakes as gifts. Enter through the narrow bakery on Baxter, right above Canal Street. There are a few pastries on display, but the coveted sponge cakes are hidden in a tower of plastic boxes behind the counter.

The man will nod; it's understood what you're here for. The only question is, how many? And the answer should be, as many as you can carry. Unlike many Chinatown bakeries that bake the cakes in a cone shape, these are offered in the traditional boat shape, allowing for a higher ratio of that gentle skin layer which I love to peel and devour before wolfing down the fluffy interior. Get here early, they sell out fast.
