A Sandwich A Day: 'The Minda' at Shopsin's

Why is there an umbrella on top of the "Minda" ($9), a breakfast sandwich at Shopsin's? I asked Zack Shopsin, who's in the kitchen these days.
I feel like if you order a sandwich on an English muffin, you deserve an umbrella. Well, if you're a girl and I give you an umbrella, I'm trying to be cute. If you're a guy, I'm just reminding you that you're a little bit prissy. It works either way.
Now that we've got that cleared up, the Minda is an awful lot more exciting than its spa-food description—turkey bacon, egg whites, cheddar, English muffin—makes it sound. The egg whites are scrambled soft with the cheese, getting the cheddar much meltier than it would be just draped on top; the bacon is crisp and pliant, the English muffin tastes deliciously buttered. It's no plate of mac-and-cheese pancakes, but this little sandwich is far tastier than I'd expected, and an easy breakfast sandwich to recommend.
