Sugar Rush: Spéculoos from Dandoy Biscuits

Dandoy Biscuits are based in Brussels, a sixth generation family business, and Borne Confections is the sole New York distributor of these cookies. (Borne Confections also carries the hard-to-find Christine Ferber Jams and Oriol Balaguer chocolates we wrote about last week). They don't come cheap (nothing in this shop does) but it's a good reason to splurge. Pain d'Amandes, Sables, golden Palmiers—they have all the brand's offerings, but I have a soft spot for the Spéculoos, $13.50 for a box of 11 cookies. The spice cookies are something like gingersnaps, but these heartier, baked in carved wooden molds. Take a nibble or even a sniff, and you can make out the marriage of spices: cinnamon and nutmeg dominate, with ginger and clove dancing in softly. (And is that a dash of anise in the very back?) Brown instead of white sugar gives these a deep earthy color, and they're almost heartbreakingly delicious with a mug of hot tea.
