Maple syrup and melt-in-your mouth maple candy are what first come to mind when people think of the Deep Mountain Maple stand at the Union Square Greenmarket. But look a little more carefully and you'll find all sorts of goodies here, including fresh and puffy maple marshmallow—and the Maple Cream ($10). Maple syrup is cooked and whipped to a superbly creamy, spreadable concoction, a light shade of gold. With a deep, mellow sweetness, it's a killer pancake and waffle topping, and equally delicious when mixed with a bit of mustard and lightly smeared on a savory ham sandwich.
