The fries at Pearl Oyster Bar look nothing like the matchstick frites I usually go for. They're as thin as if steamrolled; they droop when lifted. But despite their limp nature, they have the most remarkable crisp around the edges, an intense potato flavor, and enough salt to render them absolutely irresistible. Even after trying to save room for fried oysters—yes, Pearl fries remarkably well —I found myself polishing off the better part of an order. Delicious.
